The Jennifer Aniston Salad Recipe

A simple mediterranean based recipe that is so full of flavour and crunch made with quinoa, chickpeas, vegetable and fresh herbs all tossed in a delicious lemon flavoured dressing and then topped with pistachios and feta. I don’t know about you but I’m drooling already!

Salad Dressing Ingredients:

- 2 teaspoons lemon zest
- Juice from 2 lemons
- 60ml olive oil
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- a teaspoon fine salt
- a pinch of black pepper

Salad Ingredients:

- 360g cooked quinoa
- 400g chickpeas (1 tin), drained and rinsed
- 1 small cucumber, diced
- 50g red onion , finely chopped
- 50g fresh Italian parsley , finely chopped
- 75g fresh mint leaves , finely chopped
- 75g roasted pistachios , finely chopped
- 75g crumbled feta cheese

  • For the dressing:

    In a bowl, whisk well all of the dressing ingredients – the lemon zest, lemon juice, olive oil, honest, dijon mustard, salt and black pepper. You can prepare the dressing up to 3 days in advance and store in the fridge.

  • For the salad:

    Cook the quinoa as per cooking instructions found on the packaging. In a large bowl, combine all the salad ingredients. You can add salt and pepper to taste and if required some lemon juice. Ensure the dressing has been re-whisked before pouring over the salad and ensure the salad is tossed well until all coated in the dressing.
