Shredded Duck & Watercress Salad Recipe

This Shredded Duck & Watercress Salad is a light salad with a tasty, Chinese-inspired kick, combining tender, succulent duck with peppery watercress, crisp vegetables, and a light, zesty dressing. Perfect for a healthy lunch or an elegant evening meal, this easy recipe delivers a delicious balance of rich and vibrant flavours while providing plenty of nutrients to help keep you feeling full and energised.
Ingredients:
- 2 Duck breasts.
- Small handful of spring onions - chopped.
- 6 tbsp soy sauce.
- 100g watercress - chopped.
- 100g radishes - diced into small chunks.
- 100g mixed salad leaves.
- 2 tbsp hoisin sauce.
- 1 tbsp five-spice powder.
Method:
- Firstly, heat the oven to 200C/180C fan.
- Rub the duck breast in the five- spice powder.
- Pour 5 tbsp of soy sauce into a small roasting tin.
- Place the duck on top of the sauce and cover with foil.
- Cook for 30 minutes in the oven.
- Once this time is up, remove the foil from the duck.
- Put the duck under the grill and cook until the skin is crisp.
- Remove/strain the liquid through a sieve.
- Let the duck cool, until you can shred it.
- Meanwhile, grab a large mixing bowl and gradually add the salad.
- First add the mixed salad leaves and the chopped radish.
- Also add in the spring onion and watercress, mixing together as you do so.
- Gradually mix in the shredded duck.
- For the salad dressing, mix together: 1 tbsp of soy sauce, 2 tbsp hoisin sauce and 2 tbsp of boiling hot water.
- Drizzle the dressing over the salad and mix well.
