Pumpkins should not be wasted this Halloween
Halloween is all about spooky decorations, creative carvings and a little bit of fun — but what happens to all that delicious pumpkin flesh once the carving is finished? Sadly, far too much of it ends up in the bin when it could be turned into something nutritious and delicious!
Did you know that an estimated one million pumpkins are thrown away in the UK each year after Halloween? Many are carved for decoration, with the flesh and seeds often discarded rather than put to good use.
This year, why not make your pumpkin go further?
-
Make a warming pumpkin soup
Perfect for chilly autumn days. Add onions, garlic, vegetable stock and your favourite herbs for a comforting, nutritious meal.
-
Bake a delicious pumpkin pie
Turn the flesh into a sweet autumn treat with warming spices such as cinnamon and nutmeg.
-
Roast the seeds
Rinse, dry and season them with a little olive oil, salt and spices before roasting for a crunchy snack. Pumpkin seeds provide protein, fibre and beneficial minerals.
-
Add pumpkin to curries and stews
Its naturally sweet flavour works beautifully with warming spices, beans, lentils and other vegetables.
-
Try roasted pumpkin
Cut the flesh into chunks, season with herbs and olive oil, and roast until tender. Add it to salads, grain bowls or a Sunday roast.
Why eat more pumpkin?
Pumpkin is a versatile, low-energy vegetable that can be a valuable addition to a balanced diet. It contains fibre, which supports healthy digestion, and beta-carotene, which the body can convert into vitamin A. It also provides vitamins C and E, potassium and other nutrients.
Although pumpkin can fit well into a weight-management plan, no single food causes weight loss. Its benefits are best enjoyed as part of a varied, balanced diet.
And what about the leftovers?
If the pumpkin is clean and has been stored safely, use the edible flesh in your favourite recipes. Any unsuitable scraps can be composted where possible. If your pumpkin has been painted, treated with chemicals or left outdoors for wildlife to nibble, don't use it for eating.
This Halloween, let's enjoy the fun of pumpkin carving while making the most of the food we have. A little creativity in the kitchen can help reduce food waste and create some delicious seasonal dishes!
