Skinny Dinners – Pancetta Salad
Want an easy way to lose weight and still eat tasty food? Try this simple pancetta salad which contains only 268 calories and 16.2g of fat, 3.9g of sugar and 1.2g of salt per serving.
This delicious healthy weight loss recipe serves 4.
– 4 eggs
– 1tbsp olive oil
– 75g pancetta
– 1 red onion, chopped
– 1 clove garlic
– 1tbsp red wine vinegar
– 2tsp wholegrain mustard
– 400g tin green lentils, drained and cooked to tin instructions
– 150g cherry tomatoes, halved
Step 1 – Place the eggs in a small pan, cover with cold water and bring to the boil. Simmer for 8 minutes then drain and rinse. Peel the eggs, and then cut into quarters.
Step 2 – Heat the oil in a non-stick frying pan; add the pancetta and onion and sauté for 4 minutes or until golden. Add the garlic and sauté for a further 30 seconds. Remove from the heat and add the vinegar and mustard. Season well.
Step 3 – Put the salad leaves in a large bowl, add the lentils, tomatoes, pancetta mixture and pan juices and toss. Top with the eggs and serve straight away.
