Salmon and Basil Sizzle

Cooking Time: 15 minutes
Per Serving: 417 calories, 24g fat (4g saturated), 10.5g carbs.

Ingredients
– 4 salmon fillets
– 1 lemon
– 2tsp olive oil
– 12 basil leaves
– 200g frozen soga beans
– 200g frozen peas
– 1tbsp light Italian dressing

Method
Step 1 – Put the salmon fillets into a shallow dish, season with salt and ground black pepper. Cut ½ of the lemon into 4 wedges and reserve. Then squeeze the juice from the other half over the salmon and drizzle with 2tsp of oil and a couple of torn basil leaves.
Step 2 – Heat a griddle pan or grill and cook the salmon for 10 minutes, turning as needed.
Step 3 – meanwhile, boil soya beans for 3 minutes, add the peas and cook for 2 more minutes and then drain.
Step 4 – Toss the Italian dressing into the pea and bean mixture to combine. Serve with the salmon, the remaining basil and lemon wedges.
