No-bake Cheesecake Recipe

  • 1 tsp vanilla extract
  • 200g digestive biscuits
  • 70g unsalted butter
  • 300g cream cheese (at room temperature)
  • 200g icing sugar
  • 200g mascarpone (at room temperature)
  • 250g fruit (*optional*)



  • First grab a sealable freezer bag
  • Next push all of the air out and seal it
  • Crush the biscuits until they are crumbs (use a rolling pin)
  • In a large saucepan melt the unsalted butter
  • Add the biscuit crumbs to the butter, mixing well as you do so
  • Continue doing this until the mixture is combined
  • Press the mixture into a  loose-bottomed tin
  • Pop it into the fridge
  • Mix the cream cheese and mascarpone in a large mixing bowl
  • Blend the cheeses together using a whisk
  • Do not over whisk, just do so until it is fluffy looking
  • Add the icing sugar a little at a time, making sure you are mixing well
  • Next mix in the vanilla
  • Spread the cream cheese mixture over the base and smooth the top with a spatula
  • If you’d like to add some fruit to the top, simply slice your choice and place over the top
  • Cover with cling film and leave to chill in the fridge for atleast 3 hours
  • Once the time is up, serve with some low-fat ice cream and a side of fruit
