Low Fat Recipes: Roasted Cod & Scallions With Spiced Potatoes

*Serves 4 people. Preparation time 10 minutes. Cooking time 50 minutes.*

Ingredients:
1 lemon
2 tbsp. of olive oil
1/2 teaspoon of chilli powder
2 bunches of scallions (trimmed)
12 small red potatoes (approx. 1 pound) ( sliced 1/4 inch thick)
kosher salt
black pepper
4 6-ounce pieces of skinless cod

Method:
- Heat the oven to 425° F
- On a rimmed baking sheet, toss the potatoes with 1 tbsp. of olive oil, 1/2 teaspoon of salt, 1/2 teaspoon chilli powder and 1/4 teaspoon of pepper
- Roast the potatoes, tossing once until golden and tender (25 minutes)
- Place the skinless cod and scallions on a separate rimmed baking sheet
- Drizzle over a tbsp. of olive oil and season with 1/4 teaspoon of pepper and 1/2 teaspoon of salt
- Peel strips of zest from the lemon using a vegetable peeler
- Thinly slice them and sprinkle on the fish
- After the potatoes have cooked for 10 minutes, pop the fish in the oven and roast until it is opaque throughout and the scallions are tender (15 minutes)
- Cut the rest of the lemon in half and squeeze over the fish
- Serve the fish with the scallions and potatoes, ENJOY your low fat recipes
