Low Fat Recipes: Roasted Cod & Scallions With Spiced Potatoes

 

Our low fat recipes range from snacks to full meals! The one you are about to read is roasted cod & scallions with spiced potatoes!
*Serves 4 people. Preparation time 10 minutes. Cooking time 50 minutes.*

Ingredients:

1 lemon

2 tbsp. of olive oil

1/2 teaspoon of chilli powder

2 bunches of scallions (trimmed)

12 small red potatoes (approx. 1 pound) ( sliced 1/4 inch thick)

kosher salt

black pepper

4 6-ounce pieces of skinless cod

Method:

  1. Heat the oven to 425° F
  2. On a rimmed baking sheet, toss the potatoes with 1 tbsp. of olive oil, 1/2 teaspoon of salt, 1/2 teaspoon chilli powder and 1/4 teaspoon of pepper
  3. Roast the potatoes, tossing once until golden and tender (25 minutes)
  4. Place the skinless cod and scallions on a separate rimmed baking sheet
  5. Drizzle over a tbsp. of olive oil and season with 1/4 teaspoon of pepper and 1/2 teaspoon of salt
  6. Peel strips of zest from the lemon using a vegetable peeler
  7. Thinly slice them and sprinkle on the fish
  8. After the potatoes have cooked for 10 minutes, pop the fish in the oven and roast until it is opaque throughout and the scallions are tender (15 minutes)
  9. Cut the rest of the lemon in half and squeeze over the fish
  10. Serve the fish with the scallions and potatoes, ENJOY your low fat recipes
