Low Fat Recipes: Potato Salad
The perfect side dish to accompany any meal.
Potato salad:
*Serves 4. Preparation time 5 minutes. Cooking time 30 minutes.*

Ingredients:
3 chopped hard boiled free range eggs
Salt
450g of new potatoes (chopped)
230g of fat free cottage cheese
2 teaspoons of dried dill
A bunch of spring onions (chopped)
2 level tablespoons of reduced- fat salad cream
Salad leaves

Method:
- Put the chopped potatoes into a pan and cover with water
- Add a pinch of salt and bring to the boil
- Simmer for 20 minutes until tender
- Drain and allow to cool
- Place the cottage cheese into a blender and purée
- Once blended, transfer to a bowl
- Add the potatoes
- Also add the chopped spring onions, the chopped eggs and 2 teaspoons of dried dill
- Mix together whilst adding the salad cream
- Once mixed together, serve with crisp salad leaves
