Low Fat Recipes: Butternut Squash Soup

butternut-squash-soupWho doesn’t just love a nice hot bowl of soup in the cooler months?  As part of our low fat recipes range we’ve brought you a delicious butternut squash recipe.  Enjoy!


*Serves 4-5. Preparation time 15 minutes. Cooking time 1 hour*

Freshly ground black pepper

25g of butter

500ml chicken stock

2 medium potatoes

1 stalk of celery (chopped)

1 small onion (chopped)

1 medium butternut squash (peeled and seeded)

1 medium carrot (chopped)

Low Fat Recipes perfect for maintaining a healthy balanced diet


  1. Melt the butter in a pot
  2. Cook the onion, carrot, potatoes and celery and the butternut squash for 5 minutes (until lightly browned)
  3. Pour in some of the chicken stock (enough to cover all of the vegetables)
  4. Bring to the boil and reduce the heat to low
  5. Cover the pot and simmer for 40 minutes (until vegetables are tender)
  6. Pop the soup into a blender and blend until smooth
  7. In the pot, mix in any left over chicken stock to attain desired consistency
  8. Season with salt and black pepper
  9. Once cooled, dish it up!
