Low Fat Recipes: Butternut Squash Soup
Who doesn’t just love a nice hot bowl of soup in the cooler months? As part of our low fat recipes range we’ve brought you a delicious butternut squash recipe. Enjoy!
*Serves 4-5. Preparation time 15 minutes. Cooking time 1 hour*

Ingredients:
Salt
Freshly ground black pepper
25g of butter
500ml chicken stock
2 medium potatoes
1 stalk of celery (chopped)
1 small onion (chopped)
1 medium butternut squash (peeled and seeded)
1 medium carrot (chopped)
Low Fat Recipes perfect for maintaining a healthy balanced diet
Method:
- Melt the butter in a pot
- Cook the onion, carrot, potatoes and celery and the butternut squash for 5 minutes (until lightly browned)
- Pour in some of the chicken stock (enough to cover all of the vegetables)
- Bring to the boil and reduce the heat to low
- Cover the pot and simmer for 40 minutes (until vegetables are tender)
- Pop the soup into a blender and blend until smooth
- In the pot, mix in any left over chicken stock to attain desired consistency
- Season with salt and black pepper
- Once cooled, dish it up!
