Lentil spread – a cheeky clean eating alternative to butter
A hit at any party, this lentil spread makes butter obsolete! This protein-packed alternative tastes great on whole-grain breads, crackers, pitas and brown rice cakes. We like to use it as a dip for crudités.
Ingredients
2 tbsp of raw unsalted walnuts
1 cup of cooked puy lentils
2 green onions, trimmed and coarsely chopped
2 cloves of garlic
1 tbsp of grainy mustard
1 – 2 tbsp of avocado oil (or other good-quality oil)
1 tbsp of low sodium soy sauce
Sea salt to taste
Freshly ground black pepper
How to make
- Place all the ingredients in a food processor and process until smooth.
- Adjust consistency by starting with 1 tbsp of oil adding more if necessary.
- Cover and refrigerate.
It really is as simple as that…delicious too!
