Lemon Herb Chicken Recipe
A simple chicken recipe designed for those who want to do something different with chicken! Whether it’s a snack or for something on the go, give it a try! Make it a meal by serving with some low-fat potatoes or chilli wedges!
Ingredients:
- 1 lemon
- 1 tbsp olive oil
- salt and pepper
- 2 chicken breast halves
- handful of fresh parsley
- Mixed salad leaves
- Pepper *colour of choice*
Method:
- Cut lemon in half
- Squeeze the juice from the lemon over the chicken breast halves
- Season for taste
- Heat the olive oil in a small skillet over medium low heat
- When the oil is hot, place the chicken in skillet
- Add the juice from the other half of the lemon
- Saute for 5-10 minutes on each side until the juices run clear
- Once cooked, sprinkle over the parsley for garnish
- Grab a large mixing bowl and put in some salad leaves
- Chop up some pepper and add that in, mixing as you do so
- Once the chicken has cooled, slice into thin strips
- Gradually add that to the mixing bowl
- For extra flavour, you can add a dressing to your dish.
Mediterranean Dressing:

Whisk 1 tbsp of red wine vinegar and:

1 teaspoon of dijon mustard

1/2 teaspoon kosher salt

Pepper to taste

Gradually whisk in 1/3 cup of olive oil

Mash in some crumbled feta cheese
-
Also add 1 tsp of dried oregano
-
& 1/2 of a diced tomato
Drizzle over the salad, mix well and enjoy!
