  • 1/4 tsp dried dill
  • 2 large eggs
  • 1 cup chopped broccoli
  • 1/2 cup chopped spinach *Optional*
  • Cooking spray
  • 2 tbsp feta cheese, crumbled


How to make:

  • Heat a skillet over medium heat
  • Spray the pan a few times with the cooking spray
  • Gradually add the chopped broccoli
  • If you are wanting to add spinach, gradually add that also
  • Cook for 3 minutes
  • If you haven’t already done so, beat the large eggs
  • Combine the egg, dill and feta cheese in a bowl
  • Add this mixture to the pan
  • Cook for 3-4 minutes
  • Flip the omelet and cook for another 2 minutes on that side
  • Once ready, serve warm straight away
  • Serve on its own or with some whole-grain bread toasted
