Crepe Recipes for a Healthy Pancake Day Treat!

Hands up who loves a Crêpe?

A crêpe is a thin French pancake, usually made from wheat flour and is served with sweet or savory fillings or toppings.

Unfortunately, crêpes are not exactly one of the first things you think of when it comes to healthy eating and with Pancake Day vast approaching, could crepes do our weight loss efforts more harm than good?

Maybe not!

You will be happy to hear that the pancake itself won’t do much damage to your waistline if enjoyed as an occasional treat, however the fillings or toppings on the other hand can be laden with sugar and fat and yes unfortunately that includes delicious Nutella.

Here at Slimming Solutions we are firm believers in a little of what you fancy is not at all bad for you.

With the help of closeronline, we have tracked down a couple of healthyish crêpe recipes that you can enjoy on Pancake Day without feeling guilty.

For a basic but tasty French crepe mix use:
– 55g/2oz self raising flour
– 1tbsp caster sugar
– 2 free range eggs
– 100ml/31/2fl oz milk
– 25g/1oz butter

Method:
– Mix the flour, sugar, eggs and half of the milk in a bowl.
– Add the rest of the milk little by little as necessary until the batter has the consistency of double cream.
– Heat the butter in a frying pan over a high heat until it is foaming.
– Add a ladleful of the batter mixture to the hot pan, swirl the pan to spread the mixture evenly and fry the crepe on both sides for 1-2 minutes until golden brown.

Nick Willoughby, owner of trendy Creperie Creme de la Crepe, has very kindly shared one of his favourite healthy pancake recipes with us:
– Start by mixing low fat crème fraiche with freshly ground pepper and lemon juice to create a delicious low fat lemon infused crème fraiche.
– Next, layer hot roasted salmon and a sprinkling of chopped spring onions, with a healthy portion of fresh rocket onto the crepe.
– Drizzle the delicious crème fraiche on top and wrap it up.

Prefer a sweet variation? Try this healthy fruit filled option:  
– Chop up a banana, nectarine and mandarin and fill the crepe.
– Drizzle with honey and sweeten to taste.
