Ingredients
– 500g stewing beef
– 350ml vegetable stock
– 2 red onions, quartered
– 1 red pepper, chopped
– 1 green pepper, chopped
– 2 carrots, chopped
– 2 garlic cloves, finely chopped
– 1 tps tomato purée
– 1 tps Italian seasoning
– 1 tps rosemary
– salt and pepper
Cooking instructions
1. Gently fry the onions and garlic.
2. Add the peppers, carrots, tomato purée, stock, seasoning, and beef to the pan.
3. Cover and simmer for 40 minutes.
4. Remove the lid and simmer for a further 20 minutes.
5. Split into four bowls and serve.
